
Rings that are right on salads, tacos or whatever needs a touch of mild heat and burst of flavor.
Yield
about 4 pint jars of peppers
Ingredients
- 40-48 banana peppers (or Hungarian Wax or whatever pepper you want to try)
- 3 cups distilled white vinegar
- 2 cups water
- 2 tablespoons pickling salt
- 2 tablespoons sugar
- ½ teapsoon pickle crisp
- 4 cloves of garlic, smashed & peeled
Directions
- Wash & slice peppers into ⅛ inch rings
- Pack peppers into jars leaving ½ inch head space
- Add 1 clove garlic and ⅛ teaspoon pickle crisp to each jar
- Mix together vinegar, water and sugar
- Bring vinegar, water and sugar mixture to a boil
- Pour hot mixture over pepper rings in the jar
- Wipe edges of jar opening with a clean cloth and then put on lids and screw bands. Thighten finger tip tight
- Process in hot water bath for 10 minutes
